Join us for a unique hands-on experience where you'll learn how to transform fresh raw milk into delicious, warm mozzarella — just like it's been done in the countryside of Southern Italy for generations.
Guided by a master cheesemaker, you'll dive deep into each step of the process: from curdling the milk using rennet, to cutting and heating the curd, and finally to the magical moment of stretching and shaping the mozzarella by hand (filatura). This is not just a demonstration — it's an opportunity to get your hands in the mix and understand the texture, timing, and temperature that make all the difference.
You'll also learn how to replicate the technique at home and what ingredients or tools make a real difference. As your freshly made mozzarella cools, enjoy a tasting of traditional bruschetta, freshly baked bread, and local extra virgin olive oil — simple ingredients that perfectly complement the creamy cheese.
To elevate the experience, you'll sample local wines paired with the mozzarella and enjoy a glass of homemade limoncello as you relax after your creation. The class includes a brief educational tour into the traditions of cheese-making in the Campania region.
This course is ideal for food lovers who want to go beyond the plate, gaining a deeper appreciation for artisanal craftsmanship and the beauty of doing things the slow, authentic way.
